Lentil pancakes

Great recipe if you ran out of any of the main ingredients for pancakes, for example flour, milk or any plant-based alternatives, eggs and so on.

You would only need red lentils and water and any spices or herbs you have at home.

The batter will be as thick as my other favorite pancake recipe based on buckwheat flour and bananas.

Ingredients:

  • Lentils
  • Twice the amount of water

Soak the lentils in the water overnight and then blend well in a blender.

Cook like pancakes in a non-stick pan. Either small ones or the size of a crepe/wrap.

I use the base recipe for sweet ones with chocolate spread, peanut butter, or jams.

For savory versions I add cayenne pepper, salt, chia seeds, ground flaxseeds, smoked paprika to the batter before cooking. Those pancakes go extremely well with squashed avocado and hummus.
